Ingredients:
1 tbsp sesame oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 cup snow peas
1/4 cup chopped green onions
1 tbsp grated ginger
1 tbsp soy sauce
Salt and pepper to taste
Directions:
Heat sesame oil in a large skillet over medium-high heat.
Add bell peppers, zucchini, yellow squash, and snow peas.
Stir fry for 4-5 minutes or until vegetables are tender-crisp.
Add green onions, ginger, soy sauce, salt, and pepper.
Stir to combine and cook for another 1-2 minutes.
Serve hot with rice or noodles.
