This is one of our absolute favorite weeknight dinner recipes. It's super easy to make, ready in under 30 minutes, and can be served hot on top of your choice of fresh greens, zucchini noodles, buckwheat noodle or side of your choice.
Ingredients:
4 salmon fillets
2 tbsp olive oil
2 tbsp chopped fresh parsley
1 tbsp chopped fresh thyme
1 tbsp lemon juice
1 tbsp lemon zest
Salt and pepper to taste
Directions:
Preheat oven to 400°F.
Line a baking sheet with parchment paper.
In a small bowl, mix together olive oil, parsley, thyme, lemon juice, lemon zest, salt, and pepper.
Place salmon fillets on the prepared baking sheet.
Brush salmon with the herb mixture.
Bake for 12-15 minutes or until salmon is cooked through.
