Summer's almost here, and we're starting to enjoy the first heirloom tomatoes of the season!
Instructions:
Dice 1 loaf of Italian Country Bread and toss in extra virgin olive oil
Place in the oven and toast for a few minutes until the edges are toasted and the inside is still soft
Slice and salt your heirloom tomatoes
Place salted tomatoes in a caulindar and collect the juice for later
In a small bowl combine the tomato juice, extra virgin olive oil, red wine vinegar, sliced shallots, fresh basil and mozzarella
Toss the dressing, sliced tomatoes and toasted bread in a bowl, and let sit for 15 minutes before serving
Toss with sea salt and black pepper and enjoy!
