Heirloom Tomato + Basil Panzanella Salad Recipe

Summer's almost here, and we're starting to enjoy the first heirloom tomatoes of the season!⁠ ⁠

Instructions: ⁠

Dice 1 loaf of Italian Country Bread and toss in extra virgin olive oil⁠

Place in the oven and toast for a few minutes until the edges are toasted and the inside is still soft⁠

Slice and salt your heirloom tomatoes⁠

Place salted tomatoes in a caulindar and collect the juice for later ⁠

In a small bowl combine the tomato juice, extra virgin olive oil, red wine vinegar, sliced shallots, fresh basil and mozzarella⁠

Toss the dressing, sliced tomatoes and toasted bread in a bowl, and let sit for 15 minutes before serving ⁠

Toss with sea salt and black pepper and enjoy!⁠
