5 Minute 4 Ingredients (or less) Healthy Holiday Snacks

Let's cut to the chase. Nobody wants to spend hours in the kitchen! You have better things to do, like catching up on the latest documentaries on HBO, or maybe you want to do some yoga, or read a book...I can give you a thousand reasons. The truth is that when the snacky brain hits you, it doesn't discriminate. You will reach for the easy, the fast, and the furious. I don't want to keep you from cooking with a long introduction. Also because these snacks don't really need an intro, they are fierce and healthy. If you want a long story, you can read my bio. That's the reason why I'm always looking for healthy kitchen hacks.

Crunchy Chocolate Dipped Bananas

Ingredients:

Directions:
  1. Boil 1 cup of water in a small pot. Place a glass bowl so it covers the top of the pot and place cacao paste. Wait 6 minutes or until the cacao paste fully melts.
  2. Add raw honey to melted cacao and mix. (adjust for sweetness)
  3. Dip one freeze dried banana at a time and place on a plate wrapped in a baking sheet.
  4. Place plate with cacao dipped bananas in fridge for 10 minutes or until chocolate is hardened.
  5. Enjoy!

Horchata Cauliflower Oatmeal

  • 1 bag frozen cauliflower rice
  • 1/2 cup milk (nut milk optional)
  • 1 cinnamon stick (1/2 tsp if powdered)
  • 1 TSP raw honey
Toppings (optional)
  • Sliced strawberries
  • Crunched up almonds (for crunchiness)
  • 1 TBSP crunchy almond butter
  1. Place cauliflower rice in a pot with your choice of milk, cinnamon, and honey. Bring to a boil while stirring.
  2. Once boiling, reduce heat to medium-low and continue stirring until the oatmeal reaches your desired thickness, about 8-10 minutes.
  3. Remove from heat and transfer to a bowl.
  4. Drizzle with creamy peanut butter and top with sliced strawberries!

Ingredients

  • 4 oz cacao paste
  • Handful of crushed almonds
  • 3 pitted dates
  • 1 tsp of chaga mushroom powder (optional! or any other functional mushroom)

Directions:

  1. Boil 1 cup of water in a small pot. Place a glass bowl so it covers the top of the pot and place cacao paste. Wait 6 minutes or until the cacao paste fully melts.
  2. Add crushed almonds, pitted dates, and chaga in food processor
  3. Mix melted cacao and roll into balls using a teaspoon to measure.
  4. Voila!
